    What beautiful cookies! I’ve heard about them, but I hadn’t ever seen them “for real”. I need to get one of those pizzelle irons! Do they always have the same decoration? Have a wonderful time in Italy!

    Hi there! I am a wedding coordinator and I’m putting on an Italian wedding in December. I like to get as much done ahead of time as possible so I was wondering how far ahead and how to store the pizzelles properly? Thank you so much!

      Hi Darla, You can make the pizzelle now and then freeze them. Be sure they are completely cooled and then package them in groups of 6. Wrap them carefully in plastic wrap and then place them either in a freezer zip bag or an airtight container with a lid. Just make sure your container is deep enough so that the pizzelle don’t get crushed when you place the lid on. I would also recommend that you dedicate a space in the freezer for the pizzelle so that no other items crush or break them since they are very delicate. The pizzelle will defrost in very little time–if you are making a lot of them, I would recommend defrosting them the day before the wedding so they have plenty of time to come to room temperature.
